Let's be honest, everyone has a different way of cooking a prime rib, and chances are, we are all right. But I thought I would throw my two cents in, one, because I love prime rib and two, just because I can.
After having cooked hundreds of prime ribs, both professionally and recreationally, I have found what I believe is my standard.
Seasoning: about a pound of Kosher salt, to create a nice salt crust ontop, along with a half-cup of black pepper, granulated onion and garlic.
Cooking: 3 hours at 325 is yields a perfect medium rare. Let it sit for half an hour to an hour and you are in business.
